MISSION

The idea to host BBQ clinics came from the fact that there is so much misinformation out there preventing you from nailing what should ultimately be a pretty simple cook. With the price of brisket rocketing, you can't really afford to throw over £100 down the drain every time you try and perfect the dark arts. So we have taken the hit for you, experiencing numerous shattered dreams and temper tantrums in pursuit of refining our techniques to produce consistently great barbecue.

Our clinics will train you in the Bonaparte Barbecue philosophy of master the fundamentals and the rest will take care of itself. We don't use a binder, we don't inject, we don't spritz. You know why? Because it will not make any difference to the final product. In fact, it will detract from it. But selecting the right meat, trimming correctly, seasoning simply, achieving stable temps, not peeking, and pulling to touch, will ensure that you reach barbecue heaven.

On the Bonaparte Barbecue Clinic we will take you through our ten stage strategy with military precision, guiding you from the moment you wake up and light those coals to when your guests sit down in front of a barbecue feast.
